Our Aubergines
It is healthy, why

They are vegetables rich in purifying and restorative properties, and are particularly recommended to those who suffer from high blood pressure.






2 aubergines
200 g pixel tomatoes
200 g scamorza cheese
80 g black olives
salt and pepper





To prepare baked aubergines, start slicing aubergines into slices being 1 cm thick. Salt slices, put them into a colander, cover them with a plate on which you will put a weight and let rest for about half of an hour. In the meanwhile dice scamorza cheese, cit cherry tomatoes into quarters and black olives into rounds. Then cut into the slices you have put apart by a knife and lay them in a pan covered with a greaseproof paper.


Season with cherry tomatoes, salt, pepper and oregano and put into pre-heated oven at 200° for twenty minutes. After twenty minutes, take aubergines out of the oven, add scamorza dice, olives and put them into the oven again, when the cheese has melted, take aubergines out of the oven and serve hot.
